"Ratatouille" is very famous dish and I like that it is nutritious and tasty! There are a lot of recipe of "Ratatouille", and I just adjust it to my taste:)
4 tbsp of olive oil
2 medium onions, peeled and sliced
1.5 cup of tomato puree or blended fresh tomatoes
2-3 garlic cloves, chopped
Heat up olive oil in pan and fry onions until transparent. Add in tomato puree, garlic and cook for about 6-10 min. If you're using fresh tomatoes, cook a bit longer, until it will get thick.At the end add in salt if needed.
Pour this tomato puree into the bottom of the non-stick pan.
Finely wash vegetables. Slice them thinly. Arrange these slices on top of the tomato puree by turn. Sprinkle some salt and freshly grounded pepper, drizzle some olive oil on top.
Cover the pan with foil or a parchment paper and bake in preheated oven for about 30-45 min, or until vegetables are finely cooked.
Serve with fresh baked bread on the side.
