Pita stuffed with falafel

Today I baked some pita bread and fried falafels for the stuffing. I love falafel, it is good source of protein and just yummy!
For falafels:
1 full cup of dried chickpeas, soaked in water for overnight
1 onion
3-4 cloves of garlic
A bunch of coriander
Salt to taste
1 egg
Pinch of ground pepper
Oil for frying
For pita breads:
200 ml of warm water
1 tbsp of quick rising yeast
1 tsp of salt
1 tsp of sugar
Plain flour as needed
Tahini, tomato and salad leaves for serving
First it is good to prepare the dough for pitas, as it must rise for an hour. So, dissolve salt and sugar in warm water, add in yeast and start adding flour until you will form very soft and a little bit sticky dough. Grease a deep pan with an oil and put the dough in it. Cover with a dry towel and let it rise in warm place.
Drain soaked chickpeas and wash well. Put in cold water and cook until chickpeas are half done. Drain well.
In food processor, combine onion, garlic, coriander, salt, pepper, egg and drained chickpeas. Run the processor until all the ingredients are well blended and turn in one smooth paste.

Now form falafels with two spoons or just with your hands.

Fry both sides of falafels in some amount of oil until golden in color.

Cover falafels and set them aside.
When the dough is ready, divide it in 6 pieces. Place all of the pieces on floured surface and roll up each piece in 1/4 inch thick circles. Bake in well preheated oven until breads will puff up and turn over and bake for about 6 min or until light golden. Take out and immediately wrap with a dry cotton towel.
Open up each pita with knife or just with hands, spread some tahini, place salad leaves and sliced tomatoes on top, put in 2-3 falafels and enjoy this gorgeous, delicious, healthy and just yummy home made burgers:)
