Vegetable soup puree

When you feel that you want to eat something light, healthy, but nutritious and low in calorie, soup purees are just perfect meal! They are easy to make and take no time to cook! This time I added some rice, just to give extra creamy texture to my soup.
1 smaller cauliflower, separated in small florets
1 medium potato, peeled and cubed
2 medium carrots, peeled and cubed
2 tbsp of olive oil
2 onions, peeled and sliced
Half can of sweet corn
50 grams of short grain rice, washed
Salt to taste
Pinch of fresh grounded pepper
Sour cream for serving
Boil 1 liters of water. Add in cauliflower, potato, carrot and rice. Simmer under half covered lid, stirring occasionally as rice can stick to the bottom of the pan. In separate pan, heat olive oil and fry onions until transparent and add it in to the soup. When carrots and potato are soft, add in half can of drained sweet corn and blend all of the soup in blender or with a special mixer-masher. Boil for 3-4 min, add in salt and pepper. Drop some sour cream over the soup,sprinkle some corn over it and serve. This soup goes good with garlic bread. Enjoy!
