"Hummus" is very famous in Mediterranean cuisine. It is very good source of protein, it is healthy and it is just yummy!
250 grams of dried chickpeas
5 tbsp of tahini sauce
3 tbsp of lemon juice
1-2 cloves of garlic
Salt to taste
3-4 tbsp of virgin olive oil
Soak chickpeas overnight. Drain and wash well. Put in clean water and cook until tender. In food processor, (save some chickpeas for decoration)blend until smooth using the water that chickpeas were cooked. Add in salt. Now add in tahini sauce, lemon juice, garlic, olive oil and blend again.
Serve on a flat dish, pour over a little olive oil and sprinkle with whole chickpeas.
Usually "Hummus" is served with special bread - "Pita", but I really like it with "chapati" made of whole wheat flour.
